Creating The Perfect Rub

My Squeak & Squawk cook is happening today (ribs & wings) on my Pro Q Frontier Smoker so I thought it best to make another batch of my Squeak & Squawk rub, this time with a twist!

I did this batch as a fine grind using my hand coffee bean grinder and the ingredients are:

  • 2 parts Coarse Sea Salt
  • 3 parts Brown Sugar
  • 1 part Paprika (I used half normal half smoked)
  • 1 part Coriander Seeds
  • 1/4 part Ground Nuts
  • 1/8 part Garlic Powder
  • 1/8 part Onion Powder
  • 1/8 part Sesame Seeds
  • 1/8 part Black Pepper Corns

The best part of making your own rub is you can put in what you like, the down side is it takes best part of an hour to make so I like to have a mix of my own and some Angus & Oink as well.

I mix them all together then put them through the coffee grinder to make a fine grind. Today I pinched an idea from Pitmaster X and brewed some in my cafetiere to create a liquid containing all the flavours that I will be spraying onto the ribs and wings at about 15 minute intervals after the first hour of the cook. Why? In order to build a nice bark and add extra flavour during the four to five hour cook.

Did it work? Absolutely. the ribs turned out near perfect and both the ribs and the wings were delicious.
