They carefully steep their quality organic green tea and ferment it with organic cane sugar over several weeks, allowing the kombucha culture to naturally consume the sugar as part of the process.
Once they’ve reached their signature flavour profile, they blend in fresh-pressed Somerset apples along with organically grown blackcurrants from a local smallholding, then leave it for a second, shorter fermentation.
The crisp sweetness of apple pairs perfectly with the rich, slightly tart depth of blackcurrant, delivering a well-rounded flavour that’s as comforting as it is vibrant.
